24 Vanilla cupcakes (method matters)

These feel like the cupcakes of yesteryear to me, but they are organic and not from a box

Recipe

Ingredients:

Wet

1 cup milk

2 cups sugar

1/2 cup vegetable oil or half apple sauce combo

1 tbsp vanilla

2 eggs

(1 cup of water for later)

Dry
1 1/2 tbsp. Honey
1.5 cup oats
3 cups water and 1tsp or so of salt

Instructions:

Oven to 350

Add the wet stuff (not the water) in a bowl and combine.

Add the dry ingredients and mix until combined

While mixing on low add the water to the batter. It’s going to look thin. Scrape the sides and trust the process

Fill cupcake liners about half way and bake for 15-17 minutes

Go make some sort of icing after they are cooled.
