Focaccia (weekday)

This is both excellent and fast. While other focaccia recipes might take 24 hours and not be must better.

Recipe

Ingredients:

1 1/2 cups water (340 g)
1 1/2 tsp instant yeast
2 tbsp olive oil (then 4 more later) 6 tbsp total

2 1/2 cups bread flour (390 g)

2 tsp salt

crunchy salt and rosemary for topping

Instructions:

Put everything in a bowl (only 2 tbsp oil) stir to combine. Cover for 20 minutes.

Mix with a wet hand stretch and fold in the bowl turning it 90 degrees like 30 times cover for another 20 minutes

Prep a 13×9 pan with parchment and 3 tbsp of oil maybe add more or a quick veg oil spray beforehand .

With a wet hand move the dough into the 13×9 and fold it over a bit and then press unto the pan. Press out major air bubbles and cover for 2 1/2 to 3 hours

20 minutes before it’s done set the oven to 475.

Add the last 1 tbsp of oil on top and dimple the dough all the way to the bottom of the pan. Push it into the corners if needed. I do this and give it time to recover a bit while the oven heats up but some people do it just before putting it in the oven.

Bake for 16 to 20 minutes
